Our restaurants wake up extra early to prep for the day. The dim sum rollers arrive first to make dim sum by hand.

Most of our dim sum rollers have been with us since the beginning. It’s a meditative practice –- roll, stuff, fold, pinch -- that takes tremendous skill, an eye for detail, and most importantly, a genuine love for scratch cooking.
