CLASSIC WITH A TWIST: ASIAN CAESAR SALAD

How to make our house Caesar dressing.

A classic Caesar Salad is usually defined by the dressing. It’s a creamy combination of egg, anchovies, garlic, lemon juice, Worcester sauce, olive oil, black pepper and handfuls of Parmesan. Our new Asian Caesar Salad puts a twist on the classic recipe with our very own house Asian Caesar dressing.

When crafting this recipe, we tapped into our Asian roots with ingredients like Chinese fermented black beans for saltiness and sesame seeds for creaminess. Just like the classic recipe, it’s all about the dressing.


Asian Caesar Dressing Ingredients

HOW TO MAKE: ASIAN CAESAR DRESSING

INGREDIENTS

3/4 c. Silken Tofu

1/4 c. Grated Parmesan

5 Garlic

2 tbsp. Rice Wine Vinegar

1 tsp. Sriracha

2 tbsp. Chinese Fermented Black Beans

1 tbsp. Sesame Seeds

1 tbsp. Fresh-Squeezed Lime Juice

1/2 tbsp. Gluten-Free Soy Sauce

1 tsp. Black Pepper

DIRECTIONS

Add all ingredients to a blender and blend until smooth and creamy.

Blending Caesar Dressing 
 

The tofu gives the dressing substance, while the sesame seeds provide creaminess. Sriracha, used in place of Worcester, gives it a little zest (though it’s not spicy). And lastly, you can’t have a Caesar Salad without croutons. We make ours from scratch using wonton dough that’s crisped to perfection.
