Many of P.F. Chang's Signature Cocktails are modern twists on the classic versions. Our Chinese 88 is a modern interpretation of a French 75, a cocktail first made popular in the 1930's. We've updated the original recipe with Plymouth gin and Mumm Napa Sparkling wine. During the 1920’s, the government restricted the manufacturing, transportation and sale of alcoholic beverages. As a result this country lost over 500 distilleries, 1,200 breweries and 180,000 saloons and maybe most importantly, the art and craft of bartending was lost. It wasn't until the 1980's that bartending and the craft of the cocktail emerged again as an exciting profession. The classic cocktail returned. Using premium spirits, fresh ingredients and good old fashioned hospitality--a revolution began behind the bar. Mixologists and bartenders are once again considered artists, as their practical knowledge and personal finesse unquestionably enhances the Guest’s experience.
